CORE PURPOSE

​

  • Ensure the F&B offering within the lounge is to a world-class standard and in line with Brand and guest expectations

  • Lead and inspire the kitchen team to execute the highest level of culinary experience

  • Control costs

Ensure the F&B offering within the lounge is to a world-class standard and in line with Brand and guest expectations

​

  • Design of menus to be in line with cuisine philosophy

  • Maintain highest quality of ingredients

  • Manages daily orders and checks quality of the food products received from suppliers and commissary off-site kitchen

  • Promote the features and F&B options to guests

  • Talk with guests and make menu recommendations and suggestions about the menu offerings

  • Present brief culinary moments in front of the guests with dishes coming from the hot kitchen

  • Menu presentations and tastings to the Lounge management on a regular basis

 

 

Lead and inspire the kitchen to execute the highest level of culinary experience

​

  • Lead, coach, motivate the kitchen team

  • Manage and train all kitchen and back-of-house kitchen staff to achieve high performance

  • Lead by example, is a strong role model for interpersonal performance standards and a champion of culinary standards

  • Create a strong team relationship with the kitchen staff

  • Share responsibilities with the Lounge Leader and Head House Keeper in managing all aspects of the Lounge

  • Champion hygiene, food quality and food safety standards

  • Ensure cleanliness and food safety processes (HACCP) are followed and implemented throughout

 

 

Control costs

  • Audit staffing and ensure labor costs are in line with budget

  • Give input to budgets and manage food cost

  • Astute placing of food orders

  • Monitor inventory use and ensure correct stock controls are practiced

  • Oversee equipment maintenance and condition

Desired education

​

  • Degree OR Professional Diploma in Culinary Arts

 

 

Desired work experience

​

  • 5 years minimum work experience within a luxury hotel or high-end restaurant
